Oven Reads 25–50°F Off a Rack Thermometer

Check, in this order

Take any foil off the racks and the oven floor before you test.

Stand a thermometer mid-rack in the centre, set 350°F and let the lamp go out.

Where Viking draws the line
Viking’s free-standing gas range service manual sets 350°F, averages cycles three to five and accepts 15°F under to 25°F over. So a temperature off by 25°F low is already outside, 25°F high sits on the edge, and 50°F either way is well past it.
The test uses a weighted thermocouple at steady line voltage. A kitchen thermometer is rougher, so its average is a strong hint rather than a verdict.
Before anyone touches the adjustment, Viking’s calibration chart checks line voltage, igniter current, gas pressure and where the thermostat bulb sits. A sensor that reads erratically is replaced, not calibrated.
Stop and call if
- The average lands outside 335–375°F on two separate days.
- Readings jump from one cycle to the next instead of settling.
- The display shows an oven-sensor code such as F2 while the temperature is off.

Usually not. Viking's gas-range test tolerates up to 15°F low and 25°F high, and a home thermometer adds error of its own. If bakes come out right, leave it; if they run pale or long, Viking Repair Redmond checks it on (425) 585-2373.
Will a calibration cure uneven baking as well?
Not by itself. A calibration shifts the whole oven up or down; it cannot even out heat. Viking's gas range manual traces left-to-right differences to the burner's air shutter and orifice, and foil on a rack or the oven floor skews heating too. Mention both when you book.
