Can you calibrate a Viking oven yourself?
Checking, yes: a thermometer and a few thermostat cycles show how far off it runs. Adjusting, no: the error may have another cause first. Viking Repair Redmond, (425) 585-2373.

Check, in this order

Average several thermostat cycles at 350°F with a thermometer on the centre rack.
pass close to 350°F: nothing to adjust fail well off: go on, adjust nothing yet

Cold oven: close the door on a paper strip all round.
pass grips everywhere: not the door fail slips out: a door seal fault that calibrating would hide

Gas oven: confirm a steady flame at the burner once it lights.

Why the adjustment waits
Viking’s free-standing gas range service manual checks house voltage, igniter current, gas pressure and the thermostat bulb’s clips before it judges calibration. Turning up an oven that runs cool from a tired igniter only hides the fault.
The adjustment is one coarse screw, with Viking’s manual capping how far it may turn — too blunt to guess with, so it is bench work. How far off is too far off has the numbers.
Stop and call if

Will recalibrating fix uneven baking?
Seldom. Calibration shifts the whole oven up or down; it cannot cure one hot side. Viking's gas range service manual traces uneven left-to-right heat to the burner's air shutter and orifice. Have Viking Repair Redmond, (425) 585-2373, check the burner first.
Is running hot judged the same as running cool?
No. Viking's test is lopsided: at a 350°F setting an averaged reading up to 25°F over still passes, but only 15°F under does. Outside that band, find the real cause first before anyone turns an adjuster to chase the number.
