Check, in this order

Why the signal arrives early
The lamp only reports the thermostat: lit while heat is called for, dark once it is satisfied, then cycling as the oven holds. Going dark early means the sensing part thinks the cavity is hotter than it is.
On electronic-control Viking ovens such as the VGSO166 and the EOC4 wall ovens, that part is an RTD, whose resistance rises with heat; extra resistance in it or its connection reads as extra heat. Older gas ranges sense with a capillary bulb, and Viking’s calibration test first confirms the bulb is straight, clipped and clear of the liner.
A short lag right after the first signal is not a fault: Viking’s own service test ignores the first two thermostat cycles and averages the next three.
Stop and call if
- It still holds well short after twenty minutes of cycling, on two separate days.
- Bakes come out pale or underdone even though you waited for the signal.
- The display shows F2 or F02 alongside the early signal.

Should the food go in the moment the preheat light goes out?

Can the oven be adjusted rather than given new parts?
Sometimes. On Viking's dial-thermostat gas ranges the service manual provides an adjustment at the thermostat itself, so a steady offset can be corrected. A sensor or thermostat bulb that reads erratically, or has come loose, needs fixing first. The visit tells you which applies to your oven.
